Sarah's Chocolate Fondant

Ingredients: Makes about 4 Servings

1 Cup of sugar
8 ounces unsalted butter 2 sticks ( Slice or cube them so they can melt easily)
8 ounces semi-sweet chocolate or bittersweet if you like dark chocolate
5 Large Eggs
4 Egg yolks
1 cup of sifted Cake flour
Orange Zest of a whole orange(optional)

Tip: You can substitute cake flour with all-purpose flour, just measure out 1 cup of all-purpose flour, and then remove 2 tablespoons.

Method:
1. Preheat oven at 500 degrees.

2. Fully Melt the chocolate and butter on the top of a double boiler set over simmering water (please try not to let the water boil). Stir continuously, Also add the orange zest in the beginning.

3. Whisk together the egg yolks, the whole eggs and sugar until fluffy and tripled in volume.

4. Whisk the chocolate mixture and egg mixture together and then slowly add the flour.

5. Butter 6-ounce ramekin or metal molds. Pour batter into molds, up to 1/4-inch from top and bake for 7 minutes or until outer part is cooked and the inner still liquid. Do not overcook because the heat will carry over and continue to cook after removed from oven. Unmold and serve. They are wonderful cold or hot.
